A Family Recipe

Nope – not the kind the Baldwin sisters used to make on The Waltons.

Sweet Potato Muffins

These have been a family favorite for years. Do NOT tell children that they’re sweet potatoes until they’ve eaten them. Kids devour the mini ones like candy.

I have no clue for a carb count but it should be simple to figure out.

2 cups Bisquick
1/2 cup sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon mace
1/8 teaspoon ground cloves
1 egg
3/4 cup milk
2 tablespoons vegetable oil
1/2-3/4 cup cooked, mashed sweet potato (I just buy the large can and mash what I need.)
1 tablespoon cinnamon sugar

Preheat oven to 400 degrees. Grease 16-18 muffin tins. Combine dry ingredients: add egg, milk, oil and sweet potato. Mix gently and fill muffin tins two-thirds full. Sprinkle with cinnamon sugar.

Bake 18-20 minutes or until the center springs back when touched lightly.

Note: These can also be made as miniature muffins. Reduce baking time to 10-12 minutes.
